I really wish I could give this second Thoughtful Pinch to teachers who probably need it more than any of us -  but darn that fine line between fun and inappropriate!

Even though I'm as much Irish as Manny Pacquiao, I have had a tradition to spread St. Patrick's Day cheer since I was in my early twenties.  I make Irish Creme from a recipe I got from a friend, still referring to it on the original sheet of paper she gave to me.  I pass this cheer around to all who deserve a little thanks.  This is a crowd pleaser.  Nothing says thank you more than some dessert liquor. 

I have used recycled baby food jars to give friends a "shot" of this liquid gold. I have walked over to the neighbor's house with a wine glass full of it.  I have given the creme in beautiful jars and bottles for those to enjoy in a cup of coffee.  But the best way to enjoy this lovely concoction is to pour it over ice cream (mint and chip to be precise) and just spoon away. Plenty of ways to share this Thoughtful Pinch. If you have a blender and the ingredients well, then you are on your way to spreading some cheer (Slainte!).  Avoiding alcohol?  I promise if you omit the whiskey from the recipe it will still be decadent and appreciated.

Making this pinch from scratch doesn't mean you're better than the friend who pours some Bailey's in a cute mug and says, "I'm thinking of you and we need to toast."  

Relax, this is easy. Thoughtfulness = a cup of cheer = your pot o'gold. 

If you are an Organic fan like me, you can insert whatever brands you want here but i have always stuck to the Eagle Brand Condensed milk as specified in her recipe.
