’m a big fan of watching videos that use the “time-lapse” feature. I think it’s so cool to see, for example, the US Bank Stadium being built in only a few minutes even though, once they broke ground, it took over 2.5 years to build.
When I was deciding whether I should write about Peanut Butter Lover’s Day , Strawberry Day, Day of Unplugging Day, Minnesota Day or Mulled Wine Day - I wrestled with the decision. From my perspective, there are too many thoughtful ways to celebrate any of those national days and I couldn’t decide which one to write about. What a great problem to have!
I was running on a treadmill in my basement when I randomly remembered that I may have red and white popcorn containers made with lightweight cardboard. As soon as I was done running, I opened up the cabinet and sure enough there were twenty-one popcorn containers. Yippee! The colors fit my theme for Valentine’s Day.
Ok, it’s the new year. I’m organized. I’m well-rested. I am ready to face 2019. As for resolutions, I made one and I also made three daily goals. Rather than getting into why I chose “Forgive” as my one and only NY resolution, I thought it was way more important to talk about what we do with all the gift cards we received over the holidays first. I mean, priorities.

If you don’t like the flavor of pumpkin, you’re pretty much counting the days for this season to end. Everywhere you turn, there are pumpkins and pumpkin-flavored products. Halloween is among us, which means there is an abundant amount of pumpkins everywhere!
I’ve mentioned before that I’m very lucky to have the support of some pretty darn talented Pellicer cousins. It’s time to introduce you to my cousin Jay-Jay, the gift-giving goddess herself. She will be collaborating with me on Thoughtful Pinch and all I can say is, “Hallelujah!” She’s been a Pro* at giving gifts for at least 35 years and fortunately for me, I have been on the receiving end of awesome thoughtful pinches for ALL THOSE YEARS!
I wrote a blog post years ago entitled Epic Party. Well, guess what. It's happening! It's happening!! On August 28, 2018, I am throwing an epic party. Happy Birthday to me!!! It's not epic in the sense that I'm flying in DJ Khaled and A-List Celebs. But celebrating my birthday and introducing Thoughtful Pinch to my friends simultaneously is EPIC to me.
My friend Rose, who was on her annual visit from Switzerland, wanted to meet up to shop and squeeze in our last chance to see each other before she left MPLS. I was brutally honest when she called to ask what I was doing at the moment. I told her I was about to take a nap.
We were on our second date having breakfast at a restaurant when I knew the hub could be "the one". We both ordered dry toast with a side of avocado with our meal. I thought I was the only one who ate toast that way! That was over twenty-two years ago! Nowadays restaurants charge an arm and leg for Avocado on Toast and it's the main dish - not a side. Well, it's worth the money. There's nothing like it.
Teams usually know their game times for hockey tournaments, like other sports, for the first few games. Then the winners and losers of those games have to face each other which means it's a "wait and see" situation before going onto the next level. Eventually it turns into a "play in the championship game or go home" situation. This year, during the weekend of the Kentucky Derby and Cinco de Mayo, I hosted our annual neighborhood Cinco de Mayo party and my son was in a hockey tournament that consisted of 5 games and a possible championship game. A recap of the weekend went as follows: Game #1 /Screw up #1 - I messed up by not checking my son's bag to make sure he had everything. We didn't have his gray hockey socks so I got a text from coach not to forget them for the next game. We won the game.
