Today’s post is really a survey. Sometimes, when I am presented with a survey for something that I want to give positive feedback, my intention is to fill it out when I have time. I don’t ever fill it out because I never have time. Oh the guilt surveys bring us! I feel like I’m always letting someone down whenever I don’t fill one out. And yet here I am expecting you to fill out my survey below.
I don’t want to assume that everyone knows what an empanada is but I also don’t want to bore everyone else with an intricate description. Let’s just say, if you know what a Hot Pockets is then you are on the right track. The difference is that empanadas are far better in quality than Hot Pockets and the flavors of the fillings varies from region to region.
So many people were going stir crazy after a couple of months of hibernating during the COVID Stay-at-Home order in 2020, that they ventured out in RVs and SUVs traveling the country. I was envious and wished that my family could also go on a Road Trip! Yes, you read that correctly. When I talk about road trips, I always add an exclamation point at the end of “road trip” (!) because for me, I always think of them as an opportunity for undivided fun.
